How to work out catering supplies for a party or buffet

Good catering is really about quantities and presentation. Here is how we would plan it, after more than 3 million orders.

Count heads, then add a little. Work out your guest number and add around ten per cent for helpers, latecomers and second helpings. That figure drives everything: how many party boxes, how many bowls of nibbles and how much you need from bulk catering supplies for a bigger do.

Boxes or a buffet? Individual party food boxes are quickest for a kids' party, since every child gets the same and there is no plating up. A grown-up gathering usually suits a buffet: lay it out on snack trays and platters at a few different heights so the table looks generous.
